Bol de verdures rostides Per veganbymanda Substances (2 racions) Per al bol 1 tassa de rúcula Per a les verdures rostides 500 g de patates 200 g de bròquil 230 g de cigrons escorreguts ½ ceba vermella ½ culleradeta de pebre vermell en pols 2 cullerades d’oli d’oliva 1/Three cullerades de sal pebre negre Per al condiment 1/2 tassa de iogurt de civada ½ culleradeta de mostassa de dijon 1 cullerada de xarop d’atzavara Sal i pebre negre al gust Per servir Julivert fresc (opcional) Flocs de xili (opcional) Passos 1. Preescalfeu el forn a 200ºC. 2. Picar les patates, les pastanagues, la ceba i el bròquil. Escorreu els cigrons. Col·loqueu les patates, els cigrons, les pastanagues i el bròquil (deseu la ceba per més endavant) en una safata de forn coberta amb paper sulfuritzat. Cobriu les verdures amb oli d’oliva i les espècies. Coure al forn durant 30 minuts. 3. Afegiu la ceba al cap de 20 minuts i rostiu-ho durant 10 minuts més. 4. Mentrestant feu l’amaniment. Col·loqueu tots els components en un bol i remeneu-los fins que quedin combinats. 5. Quan les verdures estiguin rostides és el second de combinar el bol! Comenceu amb la rúcula, les verdures rostides, l’amaniment i poseu-hi una mica de julivert fresc i escates de xili.
